John Klacking's plans to develop
Brewhouse Tavern at 8030 S.Virginnia St.
mark the next step in his company's strategy
to develop a chain of small restaurant-and-bar
properties with video poker.
The sports-themed tavern with a menu
based on barbecued meats one of
Klacking's personal passions is scheduled
for opening in July. It's located in a 2,800-
square-foot location previously occupied by a
Schlotsky's Deli.
It will employ 15 to 20.
The new restaurant is among the biggest
steps taken by Klacking's Concord Sierra
Capital Partners since it opened The
Brewhouse at McCarran Boulevard and
Kietzke Lane in late 2003.
Klacking, who also owns a stake in Club
Cal-Neva, opened the restaurant in a 50-50
partnership with the Club Cal-Neva parent
company.
Last week, companies affiliated with
Klacking acquired the Club Cal-Neva interest
in The Brewhouse. Klacking maintains his
ownership in Club Cal-Neva.
Klacking said he is scouting for further
Brewhouse locations and hopes to open five or
six in northern Nevada. He prefers to buy both
the land and buildings for new locations,
which generally will run about 4,000 square
feet each.
Jac Chandler, a chef who has worked with
PF Changs China Bistro as well as major West
Coast hotels, is helping Klacking in menu
development.
"We have to have the best food out there to
be competitive,"The Brewhouse owner said.
He's also working with Las Vegas-based
consultants on the video-poker side of restaurant
operation.
