Carson City Health Department’s food-service inspections for Jan. 2, 15, 16 and 17. A, B or C grades are given based on the inspection score, which starts at zero. Points are added for each violation. Note: Low-risk factors are noted but not factored into scoring, although restaurants are still required to correct them.

La Salsa Grill, 963 Topsy Lane #316, Carson City, restaurant, score 9, grade: A. Non-critical violations: 4. Critical violations: 1.

Critical violation: Potentially hazardous foods are held at temperatures that support microorganism growth. Potentially hazardous foods intended for cold holding were observed at 47 degrees Fahrenheit or above. The inspector observed taco meat stored at the prep station at an internal temperature of 71 degrees Fahrenheit.

Non-critical violations: No person in charge was present at the time of the inspection.

Foods were labeled with the date prepared or opened but weren’t labeled with the discard dates. (Foods were held longer than 24 hours and no written procedure was available to communicate discard dates).

The establishment’s methods of cooling food were inadequate to achieve rapid cooling. The inspector observed rice being cooled at ambient temperatures.

Sanitation buckets for storing wiping cloths in sanitizer solution were not properly stored.

At the time of the inspection, the can opener in the smoker area was noted to be soiled with food debris.

At the time of the inspection, the employee hand sinks in the food prep area was missing a cold water handle.

Both the grease barrel and the trash compacter were noted to be soiled with grease and food debris (repeat violation).

At the time of the inspection, the exhaust hood baffles didn’t properly cover the interior of the hood.

At the time of the inspection, there were excessive amounts of grease and dust that had collected in the corners of the exhaust hood.

At the time of the inspection, there were no disposable paper hand towels at the employee hand sink behind the bar.
